Valrhona Bahibe 46% milk chocolate has high cocoa content which balances the smoothness of the milk with a fruity tanginess and slight bitterness. This single origin chocolate from the Dominican Republic, the notes of cocoa, cereal, and ripe fruit pair well with banana, pear, coffee, vanilla, caramel, and pepper. It is wonderful for mousse but also great for moulding, chocolate bars, mousse, cremeux, ganache, ice cream, and sorbets.
