Valrhona Amatika Blanche 35% Vegan White Chocolate (6.6lb) is made with from almonds with subtle notes of nuts and vanilla for a delicious, dairy-free white chocolate. This plant-based chocolate pairs well with cherry, rhubarb, aniseed, hojicha tea, violet, black truffle, and rosemary.
Composition: Cocoa 35% min, Fat 41%, Sugar 42%
Tempering Points:
Melting 105-115F / 40-45C
Setting 78-80F / 26-27C
Molding 82-84F / 28-29C
Ingredients: Sugar, cocoa butter, cold-pressed almond flour (22%), emulsifier (sunflower lecithin), natural vanilla extract.
Dietary Notes: Contains almonds. May contain traces of milk, egg, soy, and gluten.
Applications: Ideal for cremeaux and ganache but can also be used for coating, molding, bars, mousse, ice creams, sorbets, and more.
Storage Conditions: Dry and cool (60-65F, 16-18C); keep out of direct sunlight and sealed air-tight after opening.

Cool Weather: Temperatures below 70F - Orders ship Monday through Friday.
Warm Weather: Temperatures above 70F - Chocolate and perishables ship Monday through Wednesday for USPS Priority and UPS 2-Day Air, or Monday thru Thursday for UPS Next Day Air. Ground shipping should NOT be used during warm weather.
