Composition: Cocoa 46% min, Fat 43%, Sugar 39%
Tempering Points:
Melting 105-115F / 40-45C
Setting 80-82F / 27-28C
Molding 86-88F / 30-31C
Storage Conditions: Dry and cool (68 - 72F, 20 - 22C); keep out of direct sunlight and sealed air-tight after opening.
Ingredients: Sugar, cocoa butter, cocoa beans from Madagascar, ground almonds (flour) 16.1%, emulsifier (sunflower lecithin), natural vanilla extract.
Dietary Notes: Contains ALMONDS. May contain traces of milk, egg, soy, and gluten.
Applications: Ideal for cremeaux and ganache but can also be used for coating, molding, bars, mousse, ice creams, sorbets, and more.
