Republica de Cacao Mexico 66% dark chocolate is highly fluid with intense fruity, floral and spicy flavor notes. Its versatile and great for enrobing, molding, chocolate bars, mousse, ganache, sauces, beverages, and more.
Mexico 66% is a 100% fine aroma cocoa from Trinitario cocoa from the regions of Chiapas and Tabasco. You'll find notes of toasted cocoa, yellow fruits, sweet peppers, and orange blossom. Its strong notes of spices make it easy to combine it with salty and savory dishes like pasilla, ancho, or chipotle chile for sauces or moles. It can be used in a variety of pastry, restaurant, ice cream, and chocolate shop applications.

Ingredients: Mexican Cocoa liquor, sugar, cocoa butter, emulsifier (sunflower lecithin).
Dietary Notes: This product may contain traces of nuts (almonds, halzenuts, pistachio, pecan nuts), peanut, gluten, sesame, milk and egg proteins.
Shelf Life: 18 months from date of production
Storage Recommendations: Store in an airtight container and keep in a cool, dry place between 60-64F (16-18C).

Warm Weather: Temperatures above 70F - Chocolate and perishables ship Monday through Wednesday for USPS Priority and UPS 2-Day Air, or Monday thru Thursday for UPS Next Day Air. Ground shipping should NOT be used during warm weather.
