Composition: 34% Cocoa, 40-42% Fat
Fluidity: Five drop (high)
Tempering: Melting 45C/113F, Tempering/Working 28-30C/82-86F
Ingredients: Sugar, cocoa butter, dry whole milk, dry skimmed milk, emulsifier: soy lecithin.
Dietary Notes: Gluten-free. Contains soy and milk. May contain tree nuts.
