Irca Sinfonia 38% Milk Chocolate has intense, dark color with the pure and unmistakable flavor of cocoa, enhanced by sweet notes of milk. This chocolate is highly versatile, making it great for many applications, including mousse, enrobing, ice cream, ganache, praline, bars, cream fillings, nougat, cremino, decorations, gelato, bonbons, and more.

Composition: 38% Cocoa, 38-40% Fat

Fluidity:  Five drop (high)

Tempering: Melting 45C/113F, Tempering/Working 45C/113F

Ingredients: Sugar, cocoa butter, dried whole milk, unsweetened chocolate, emulsifer: soy lecithin, natural vanilla extract.

Dietary Notes: Contains milk and soy. May contain tree nuts.

Storage Conditions: Dry and cool (68-72 F, 20-22 C) away from direct sunlight; once opened, store airtight.

Cool Weather: Temperatures below 70F - Orders ship Monday through Friday.

Warm Weather: Temperatures above 70F - Chocolate and perishables ship Monday through Wednesday for USPS Priority and UPS 2-Day Air, or Monday thru Thursday for UPS Next Day Air. Ground shipping should NOT be used during warm weather.
