Irca Reno Concerto Milk Chocolate 34% (11 lb) has a unique, sweet flavors of honey and milk with great workability for versatile use. With medium-high fluidity, it is great for many applications, including bonbons, enrobing, bars, pralines, mousse, ice cream, ganache, cream fillings, nougat, cremino, decorations, gelato, and more.

Composition: 37-39% Fat

Fluidity: Four drop (medium-high)

Tempering: Melting 45C/113F, Tempering 27-28C/81-82F, Working 28-30C/82-86F

Ingredients: Sugar, unsweetened chocolate unsweetened chocolate processed with alkali, cocoa butter, emulsifier: soy lecithin, natural vanilla flavor.

Dietary Notes: Halal, GMO-free. Contains soy; may contain soy and tree nuts.

Storage Conditions: Dry and cool (68-72 F, 20-22 C) away from direct sunlight; once opened, store airtight.

Warm Weather: Temperatures above 70F - Chocolate and perishables ship Monday through Wednesday for USPS Priority and UPS 2-Day Air, or Monday thru Thursday for UPS Next Day Air. Ground shipping should NOT be used during warm weather.
