Irca Sinfonia Pistachio White Chocolate blends the unique flavor of delicate, aromatic pistachio with the creaminess of milk and slightly savory notes. Sinfonia Pistacio is made with 16% refined and selected pistachios, 100% cocoa butter, and without artificial flavors or coloring.

This chocolate is designed to inspire your creativity in every preparation, including mousse, enrobing, ice cream, ganache, praline, bars, cream fillings, nougat, cremino, decorations, gelato, bonbons, and more.

Composition: 33% Cocoa min, 21% Milk min, 37-39% Fat

Fluidity: Four drop (medium-high)

Tempering: Melting 45C/113F, Tempering 25-26C/77-79F, Working 26-27C/79-81F

Ingredients: Sugar, cocoa butter, pistachio 16%, dry whole milk, dry skimmed milk, whey powder, emulsifier: soy lecithin, salt.

Dietary Notes: Gluten free, Kosher Dairy, no artificial flavors. Contains nuts (pistachio), dairy (milk), and soy; may contain other nuts.

Storage Conditions:Dry and cool (68-72 F, 20-22 C) away from direct sunlight; once opened, store airtight.

Cool Weather: Temperatures below 70F - Orders ship Monday through Friday.

Warm Weather: Temperatures above 70F - Chocolate and perishables ship Monday through Wednesday for USPS Priority and UPS 2-Day Air, or Monday thru Thursday for UPS Next Day Air. Ground shipping should NOT be used during warm weather.
