Irca Lilly Neutro Neutral Mousse Mix is a great ready-to-use, cold-preparation product for preparing mousse or other cream-based pastry items. It is the perfect base for many mousse applications or the creation of other cream-based products. It is an excellent substitute for gelatin and stays stable after freezing and cutting. It can also be used as a stabilizer for fresh whipped cream.
Ingredients: Dried glucose sirup, sugar, animal gelatin (bovine), nonfat dry milk, starch, artificial flavors. Contains: Milk. May contain: Eggs and Soy.
Basic Recipe:
200 g Lilly Neutro
200 g Water or milk
1000 g Unsugared cream (4-5C)
Fruit base (as desired)
Whip the cream, water or milk and Lilly Neutral in planetary with whisk, add the chosen flavoring or fruit paste, gently stirring.
Place a thin layer of sponge cake on the bottom of suitable molds and fill them uniformly. Put in a refrigerator or freezer for about 40 minutes. For a particularly effective presentation, cover or decorate with mirror glaze.
Instructions:
Add sugar to the cream when it is deemed necessary.
If two flavors are used in the recipe, it is advisable to separate them with a thin layer of sponge cake.
